I make this easy Paleo Curry dish about once a month. It’s fast and easy to pull together on any night of the week. Traditionally, this type of dish would be served over rice, but the cauliflower makes an excellent substitute. Be sure to add the riced cauliflower toward the end and let it soak up some of the sauce.
You can make this even easier by buying already-riced cauliflower in the supermarket. The few extra pennies you’d save doing it yourself (besides the mess) aren’t worth it to me. Just make sure any riced-cauliflower you buy pre-riced is nothing but cauliflower, with no additives.
